As you may or may not know, I am a graduate of the Chef John Folse Culinary Institute at Nicholls State University. I received my Bachelor of Science in Culinary Arts in 2007. Life as a food photographer in Louisiana and around the world has been crazy ever since.
Today marks a very special day. The new Lanny D. Ledet Culinary Arts Building is officially open. While important, I don't want to focus on the new building. Yes, it brings the CJFCI campus to the technological forefront of the culinary industry. Yes, it will draw in new students from around the country. But the thing that I am most excited for is that it provides an exceptional staff of chefs and professors the tools to teach at their highest potential.
Most of my teachers are still there and many of the images hanging on the wall were photos I took during one class or another. Walking through for the first time was such a surreal experience. Echos of praise for the new facility was heard every time I ran into a fellow alumnus. One day the old small kitchens of Geaux Hall will be just a faint memory, but with people like the late instructor Chef George Kaslow, the soul of a chef will be passed on to many generations to come. This year my family's paths have strayed from the usual sit down feast of thanks. We won't be holding hands and praying over a turkey feast, but the appreciation for life and each other will remain. My parents, my brother and his wife, my grandmother and Mr. Jimmy, and my wife and kid will be out in different parts of the globe for various reasons. Knowing this was in the cards, my mother rounded up the troops and created an early Thanksgiving gathering culminating in a delightful non-traditional Alabama sunset dinner. It's a blessing to have those who love you close, but even more important is to have them close in your heart.
Tomorrow night I will be giving a lecture on Food Photography and Adobe Lightroom 5 Work Flow. Kicking off with a bang, the New Orleans Lager & Ale Brewing Company pop the top on their new Tap Room. This isn't just a tasting room for their current line-up of delicious libations, but the beginning of one-off brews like the "Girl Stout Cookie". That is their Irish Channel Stout rum barrel aged with cacao nibs and peppermint. They are also bringing in food trucks every night of the week from 6 pm - till. Spahr's Seafood in Houma, La just held their third craft beer dinner. Lead by Chef Minh Lee and craft beer expert Ron Swoboda, a very delicious and informative time was had by all whom attended. Chef Lee paired a wide variety of flavors with an exceptional beer selection. The dinner was an excellent value coming in at $65 for Hors D'oeuvres, a five course dinner, and six craft beers. These past few weeks Becky and I have been so busy prepping for "The Best Chefs of Louisiana 2013".
