Portland is an interesting city for many reasons. Geographically it sits in nice small blocks and the rich farm land boarders its edges. Urban Farmer sums up Portland quiet nicely. This is what happens when a talented chef works with local farmers.
Executive Chef Matt Christianson choreographed flavors and textures masterfully during my visit. Below are the highlights.
grilled rapin with deviled eggs and pickled peppers
local grass feed beef slider with tillamook white cheddar
braised pork belly, apple mustard, ricotta gnocchi, truffle
seared scallops, lobster mousse, cauliflower agnolotti, and pear foam
